Siracha chicken drumsticks

Great for a buffet, these spicy drumsticks are full of flavor. Sriracha is used as a dipping sauce in Thailand for everything from egg rolls to seafood. In this easy recipe, it livens up chicken drumsticks with a simple spicy-sweet sauce.

Ingredients

  • 2 Tbsp sriracha sauce
  • 2 Tbsp unsalted butter
  • 1 Tbsp honey
  • 1 Tbsp rice vinegar
  • 2 garlic cloves, finely minced
  • 8 chicken drumsticks (about 2 lbs)
  • 1/8 tsp salt
  • Black pepper to taste
  • 2 Tbsp cornstarch
  • Chopped scallion, for garnish

Preparation

Preheat the oven to 400°F. Line a baking sheet with foil. Arrange a wire rack on the foil.
In a small saucepan, combine the sriracha, butter, honey, rice vinegar and garlic and cook over low heat until the sauce is smooth.
In a large bowl, season the drumsticks with the salt and pepper. Add the cornstarch and stir until evenly coated. Arrange the chicken pieces on the wire rack. Brush with the sriracha sauce mixture. Bake the drumsticks for about 50 minutes, or until golden brown and crispy. Remove the chicken from the oven. Garnish with chopped scallions.
